Ingredients
  • 1 Cauliflower, large head ((grated into rice-like pieces))
  • 2 Chicken breast ((skinless, boneless))
  • 1 cup Pineapple (fresh, diced)
  • 1 cup Bell peppers ((mixed colors, diced))
  • 1/2 cup Red onion ((finely chopped))
  • 2 cloves Garlic (Minced)
  • 1 tablespoon Ginger (grated)
  • 1 Lime ((juice and zest))
  • 1/2 cup Coconut milk ((unsweetened))
  • 1/4 cup Cilantro ((chopped))
  • 2 tablespoons Olive oil
  • Salt and pepper (to taste)
  • 1 teaspoon Turmeric,
  • 1 teaspoon Paprika
Instructions
  1. Prepare the Cauliflower Rice
    • Wash and pat dry the cauliflower. Grate it using a box grater or food processor until it resembles rice grains.
    • Heat a large skillet over medium heat. Add 1 tablespoon olive oil, and sauté the grated cauliflower for 5-7 minutes until tender. Season with salt, pepper, and turmeric. Set aside.
  2. Cook the Chicken:
    • Cut the chicken breast into bite-sized pieces. Season with salt, pepper, and paprika.
    • In a separate pan, heat the remaining olive oil over medium heat. Add the chicken pieces and cook until golden and cooked through, about 6-8 minutes. Remove from the pan and set aside.
  3. Sauté the Vegetables:

    In the same pan, add the red onion, bell peppers, garlic, and ginger. Sauté for 3-4 minutes until the vegetables are soft.

  4. Combine with Pineapple and Coconut Milk:

    Add the diced pineapple to the pan with the vegetables. Pour in the coconut milk and bring the mixture to a light simmer.

  5. Assemble the Bowl:
    • In serving bowls, place a base of the cauliflower rice.
    • Top with the sautéed vegetable and pineapple mixture, and then the cooked chicken.
    • Drizzle with lime juice and garnish with lime zest and chopped cilantro.
  6. Serve Warm
