Set your oven to 375°F (190°C).
In a bowl, toss the chicken breasts with 1 tablespoon olive oil, half the smoked paprika, thyme, salt, and pepper.
In another bowl, mix the diced sweet potatoes with the remaining olive oil, cinnamon, the rest of the smoked paprika, salt, and pepper.
In a large, oven-safe skillet or roasting pan, spread the sliced onion and minced garlic. Arrange the seasoned sweet potatoes on top.
Place the seasoned chicken breasts over the sweet potatoes.
Transfer the skillet or pan to the oven. Roast for about 30-35 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the sweet potatoes are tender.
Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
