Ingredients
  • 2 tablespoons olive oil
  • 4 skinless, boneless chicken breasts (cut into bite-sized pieces)
  • 1 large onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 carrots (peeled and diced)
  • 2 celery stalks (diced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 2 cans cannellini beans (rinsed and drained)
  • 4 cups ow-sodium chicken broth
  • 2 bay leaves
  • 1 cup kale or spinach (chopped)

Instructions
  1. Prep the Ingredients
    • Cut the chicken breasts into bite-sized pieces.
    • Chop the onion, mince the garlic, dice the carrots and celery.
    • Rinse and drain the cannellini beans.
  2. Brown the Chicken
    • Heat 2 tablespoons of olive oil in a large pot over medium heat.
    • Add the chicken pieces and cook until they are lightly browned on all sides. This should take about 5-7 minutes.
    • Once browned, remove the chicken from the pot and set it aside.
  3. Cook the Vegetables:
    • In the same pot, add the chopped onion, minced garlic, diced carrots, and diced celery.
    • Sauté the vegetables until they start to soften, which will take about 5 minutes.
  4. Season the Mixture
    • Return the chicken to the pot with the vegetables.
    • Add the dried thyme, dried rosemary, and black pepper to the pot.
    • Stir the mixture and cook for an additional 2 minutes to allow the flavors to meld.
  5. Add Beans and Broth
    • Stir in the cannellini beans.
    • Pour in the low-sodium chicken broth.
    • Add 2 bay leaves to the pot.
  6. Simmer the Stew
    • Bring the mixture to a boil.
    • Once boiling, reduce the heat to a simmer.
    • Cover the pot and let it simmer for about 20 minutes.
  7. Add Greens
    • Add the chopped kale or spinach to the pot.
    • Continue to cook for another 5 minutes, or until the greens are wilted and the chicken is cooked through.
  8. Final Seasoning and Serving
    • Remove the bay leaves from the stew.
    • Taste the stew and adjust the seasoning with salt if needed.
    • Serve the stew hot, with an option to garnish with fresh herbs.
